I used Liverpool Van Hire last summer for a similar trip. Their weekend rates for 8-seaters were around £200-250 for the whole weekend (Friday-Sunday). They were flexible with pickup and drop-off times. For self-drive, you just need a standard license since 8-seaters are under the weight limit that requires special licenses. They did ask for a security deposit of £250, which was refunded when we returned the vehicle in good condition.
One-way rentals are usually possible but expect to pay a significant additional fee. Most companies charge extra for this service because they need to get the vehicle back to its original location. For the Lake District trip, I'd recommend Enterprise or Europcar - both have locations in Liverpool and offer 8-seater vehicles. Book well in advance though, as these vehicles are popular for weekend trips, especially during peak season.
